Siltepec is located in the centre of the Chiapas region and the El Jaguar coffee is grown in the high altituse area of the Sierra Madre. The microclimate in this region creates a cloud forest meaning that the weather is humid with lots of shade, cool conditions at night and exellent soil which together create the perfect environment for the development of speciality coffee. This coffee comes from a small group of producers in the region, the beans are harvested and processed by hand, then de-pulped, fermented and washed and finally dried in the sun. This produces a spectacular coffee that is both smooth and fruity with notes of chocolate, nuts, lime and grapefruit. Suitable for all brewing methods it is equally good served black or with milk.
